Thai Red Curry Green Beans



This vegan and gluten-free Thai-style red curry with green beans smells great and tastes great. The spicy and sour red curry paste goes well with the creamy coconut milk base, making a delicious sauce that coats the soft green beans and colorful vegetables.

Ingredients:

  • 1 lb green beans, trimmed and cut into bite-sized pieces
  • 1 can 14 oz coconut milk
  • 2 tablespoons Thai red curry paste
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon coconut sugar
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro leaves, for garnish
  • Cooked rice, for serving

Instructions:

Put vegetable oil in a large pan or wok and heat it over medium-low heat

Saut the garlic and onion for about two minutes, until they smell good

Now add the red curry paste and stir it in

Cook for one more minute

Add the lime juice, soy sauce, coconut sugar, and coconut milk

Mix things together well

Put in cherry tomatoes, bell pepper, and green beans

It will take about 5 to 7 minutes of cooking until the vegetables are soft but still crisp

Serve hot with cooked rice and fresh cilantro leaves on top

Bacon Wrapped Mozzarella Biscuit Bites



The delectable combination of crispy bacon, oozy mozzarella cheese, and flaky biscuit dough is present in these Bacon Wrapped Mozzarella Biscuit Bites. They are the ideal appetizer or party snack that will wow your visitors!

Ingredients:

  • 8 slices of bacon
  • 8 cubes of mozzarella cheese
  • 1 can of refrigerated biscuit dough
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of melted butter
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of dried parsley flakes
  • Toothpicks

Instructions:

Preheat your oven to 375F 190C and line a baking sheet with parchment paper

Cut each slice of bacon in half, so you have 16 shorter slices

Take one cube of mozzarella cheese and wrap it with a half-slice of bacon

Secure it with a toothpick and set it aside

Open the can of refrigerated biscuit dough and separate it into 8 biscuits

Cut each biscuit into two equal halves, making 16 smaller pieces in total

Take each biscuit piece and flatten it with your fingers

Place a bacon-wrapped mozzarella cube in the center of each flattened biscuit piece

Fold the biscuit dough over the cheese and bacon, sealing it tightly

Roll it into a ball shape

In a bowl, mix the grated Parmesan cheese, melted butter, garlic powder, and dried parsley flakes

Dip each bacon-wrapped biscuit bite into the Parmesan mixture, ensuring it's coated evenly, and place it on the prepared baking sheet

Bake in the preheated oven for about 15-20 minutes or until the biscuit bites are golden brown and the bacon is crispy

Remove from the oven and let them cool slightly before serving

Soft Baked Maraschino Cherry Chocolate Chip Cookies



These Soft Baked Maraschino Cherry Chocolate Chip Cookies are a delightful combination of sweet cherries and rich chocolate chips. The soft and chewy texture makes them irresistible!

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Low Carb Pizza Sandwich



With portobello mushroom caps as the base, this low-carb pizza sandwich is a tasty alternative to regular pizza. It tastes great thanks to the marinara sauce, cheese, and traditional pizza toppings, but it's also low in carbs.

Ingredients:

  • 2 large portobello mushroom caps
  • 1/2 cup low-carb marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced pepperoni
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green bell pepper
  • 1/4 cup sliced red onion
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

Preheat your oven to 375F 190C

Clean the portobello mushroom caps and remove the stems

Place the mushroom caps on a baking sheet lined with parchment paper

Spread a layer of marinara sauce on each mushroom cap

Sprinkle half of the shredded mozzarella cheese on top of the marinara sauce on each mushroom cap

Layer pepperoni, black olives, green bell pepper, and red onion slices on one of the mushroom caps

Sprinkle with dried oregano, salt, and pepper

Carefully place the other mushroom cap on top, creating a sandwich

Top with the remaining shredded mozzarella cheese

Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly

Once done, remove from the oven and let it cool slightly before serving
